  • 1 can black beans, drained and rinsed Adds protein and earthiness; rinse to avoid 'mystery bean sauce'.
  • 1 can corn, drained Provides sweetness and texture.
  • 1 packet taco seasoning For easy taco flavor.
  • 1 cup salsa Use your favorite brand or homemade.
  • 2 cups shredded cheese (cheddar or Mexican blend) Cheese-loving friends will appreciate more cheese!
  • 6 pieces flour tortillas, cut into strips Provides a base for the casserole.

Optional Toppings

  • sour cream, fresh jalapeños, and cilantro Great for adding extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the shredded chicken, drained black beans, drained corn, taco seasoning, salsa, and half of the cheese.

Layering

  • In a baking dish, layer half of the tortilla strips along the bottom.
  • Spread the chicken mixture on top of the tortilla layer.
  • Add the remaining tortilla strips on top of the chicken layer and sprinkle the rest of the cheese on top.

Baking

  • Bake in the preheated oven for 25-30 minutes or until heated through and cheese is melted.

Serving

  • Let it cool slightly, then serve warm with optional toppings as desired.

Notes

Let the casserole cool for 5-10 minutes before serving for easier slicing. Fresh salsa enhances the flavor significantly.
