Ingredients
  

For the Chicken

  • 2 pieces chicken breasts, cooked and sliced Season with black pepper for flavor.
  • 1 tablespoon olive oil or sesame oil Sesame oil adds depth to the dish.

For the Rice

  • 2 cups cooked white rice Brown rice can be used for a nuttier flavor.

For the Sauce

  • 1/4 cup soy sauce Opt for low-sodium soy sauce.
  • 2 tablespoons honey or brown sugar Honey gives a beautiful glaze.
  • 1 tablespoon minced garlic You can never have too much garlic!
  • 1 teaspoon ginger Optional, but adds a zing.
  • 1 teaspoon cornstarch For thickening the sauce.
  • 2 tablespoons water To mix with cornstarch.

For the Vegetables

  • 2 cups stir fry vegetables (e.g., bell peppers, broccoli, snap peas) No wrong choices here!

For Seasoning

  • black pepper, to taste
  • red pepper flakes (optional) For those who like a spicy kick.

Instructions
 

Preparation

  • Cook your rice according to the package instructions until it's soft and fluffy.
  • Pat the chicken breasts dry and season with black pepper.

Cooking

  • Heat a tablespoon of oil in a skillet over medium-high heat. Add the chicken and cook until golden brown, approximately 5-6 minutes.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add soy sauce, honey, minced garlic, and ginger. Stir and let simmer for a minute.
  • Mix cornstarch with water until dissolved, then add to the sauce mixture to thicken.
  • Toss in the stir-fry vegetables, sautéing them until tender-crisp, about 3-4 minutes.
  • Add the chicken back into the skillet and toss to combine.

Serving

  • Scoop warm rice into a bowl and top with chicken and vegetables. Drizzle extra sauce over everything.

Notes

For best results, let the sauce simmer longer for enhanced flavor. You can also substitute ingredients based on dietary needs.
