Ingredients
  

For the chicken

  • 1.5 lbs boneless chicken breast, cut into bite-size pieces
  • 0.5 cup cornstarch For coating the chicken
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp oil (your choice) For frying
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp brown sugar
  • 2 tbsp ketchup
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water For thickening sauce

For the fried rice

  • 3 cups cooked rice, chilled (day-old works best)
  • 2 eggs lightly beaten
  • 0.5 cup peas
  • 0.5 cup diced carrots
  • 2 tbsp soy sauce for the fried rice
  • 1 tbsp butter or oil (for frying the rice)

Instructions
 

Preparation

  • Pat the chicken dry and sprinkle salt, black pepper, and cornstarch all over. Toss until each piece is coated.
  • In a bowl, mix the soy sauce, honey, brown sugar, ketchup, minced garlic, rice vinegar, and sesame oil to create the sauce.

Cooking

  • Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the chicken in a single layer and cook until golden and fully cooked, about 5-7 minutes.
  • Pour the prepared sauce into the skillet with the chicken, mix in the cornstarch blended with water, and let it simmer until thickened.
  • Remove the chicken from the pan and set it aside.
  • In a separate skillet, heat butter or oil and scramble the eggs until cooked through.
  • Toss in chilled rice, adding peas, carrots, and green onions, followed by a splash of soy sauce. Stir-fry until heated through and crispy.
  • Fold the cooked chicken back into the fried rice and mix until well combined.

Serving

  • Serve immediately and enjoy!

Notes

Use chilled rice for best results. Don’t overcrowd the pan while frying for a crispier texture. Leftovers keep well in the fridge for about 3-4 days.
