  • 1 cup coconut milk Use full-fat coconut milk for a richer taste.
  • 1 cup condensed milk A game changer that brings everything together.
  • 1/2 cup sugar Adjust the sugar according to your taste.
  • 1 teaspoon vanilla extract Enhances the flavor profile.
  • 1/2 teaspoon salt Enhances all other flavors.

Preparation

  • Step 1: Grate the cassava using a box grater or food processor until you have 2 cups.
  • Step 2: In a mixing bowl, combine grated cassava, coconut milk, condensed milk, sugar, vanilla extract, and salt. Mix until well combined.
  • Step 3: Pour the mixture into a greased steaming dish.
  • Step 4: Prepare your steamer. If you don’t have a steamer, use a pot with a heat-proof rack or saucer. Fill the pot with enough water to steam without splashing into the mixture.
  • Step 5: Cover your steamer and start the heat. Steam for about 45-60 minutes, checking at the 45-minute mark for doneness.
  • Step 6: Once firm, let the cake cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. You can reheat slices in the microwave or skillet.
