Ingredients
  

Main Ingredients

  • 2 cups cooked rice, cooled (day-old rice works best for texture)
  • 1 cup shrimp, peeled and deveined (fresh or frozen)
  • 2 pcs eggs, lightly beaten
  • 2 tbsp vegetable oil
  • 2 pcs green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil (optional)
  • to taste Salt
  • to taste Black pepper

Preparation

  • Gather all your ingredients and chop your green onions.

Cooking

  • Heat 1 tablespoon of oil in a skillet or wok over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side until they turn pink. Remove from the pan and set aside.
  • In the same pan, add the remaining tablespoon of oil. Sauté the minced garlic for about 30 seconds until fragrant.
  • Add the cooked rice to the pan, breaking it up as needed. Stir-fry until heated through and slightly toasted.
  • Push the rice to one side of the pan, pour in the beaten eggs, and scramble gently for a minute or so until just set. Mix through the rice.
  • Add the shrimp back into the pan, along with soy sauce, sesame oil, salt, and black pepper. Toss everything together.
  • Stir in the chopped green onions, letting them wilt slightly.
  • Serve the fried rice hot.

Notes

For best results, use cold, day-old rice. Cook over high heat for a better texture. If adding vegetables, maintain balance not to overpower flavors.
