Main Ingredients

  • 2 cups cooked shredded chicken Can use leftover or rotisserie chicken.
  • 1 can cream of chicken soup Low-sodium option recommended.
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 1 cup shredded cheese Sharp cheddar or your choice.
  • 1 cup crushed Ritz crackers For the crunchy topping.
  • 1/2 cup butter, melted Do not use salted butter.
  • to taste salt and pepper Season to your preference.
  • Optional: chopped green onions or parsley for garnish Adds freshness and presentation.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the shredded chicken, cream of chicken soup, sour cream, and half of the shredded cheese. Season with salt and pepper.
  • In a separate bowl, mix the crushed Ritz crackers with melted butter and set aside.
  • Spread the chicken mixture in a greased baking dish.
  • Add the remaining cheese on top, then sprinkle the cracker mixture.

Baking

  • Bake in the preheated oven for 25-30 minutes, until bubbly and golden brown.
  • Allow to cool briefly before serving. Garnish with chopped green onions or parsley if desired.

Notes

Store leftovers in airtight containers in the fridge for 3-4 days. Reheat in the microwave or oven. Can be made ahead and frozen for up to three months.
