Preparation

  • Melt butter in a large pot over medium heat.
  • Add chopped onion and minced garlic; sauté until onions are translucent, about 3–5 minutes.

Cooking

  • Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Blend to your desired consistency using a potato masher or immersion blender.
  • Stir in heavy cream or milk, and season with salt and pepper. Heat through.
  • Serve hot, adding your favorite toppings.

Notes

For best results, use a quality broth and experiment with additional herbs or spices like thyme or chili powder. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 2 months.
