Preparation

  • Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  • Drain the potatoes and let them cool slightly before dicing them into bite-sized pieces.
  • In a large bowl, mix the sour cream, mayonnaise, salt, and pepper until well combined.
  • Gently fold in the diced potatoes, crumbled bacon, shredded cheese, and chopped scallions.
  • Cover the salad with plastic wrap and chill in the refrigerator for at least 30 minutes to let the flavors meld.

Notes

For extra richness, add a dollop of cream cheese to the dressing. This salad is best served cold, and leftovers can be stored in an airtight container in the refrigerator for up to three days.
