Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 cups unsalted butter, melted

For the lime mousse filling

  • 1 cups lime juice (about 4-5 limes)
  • 1 tablespoon lime zest
  • 1 cup granulated sugar
  • 4 large egg yolks
  • 0.25 cups cornstarch
  • 1.5 cups heavy cream
  • 1 teaspoon vanilla extract

For the cheesecake filling

  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

For garnish

  • Fresh blackberries
  • Fresh mint leaves
  • Additional to taste lime zest

Instructions
 

Prepare the Crust

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until it resembles a buttery sand texture.
  • Press the mixture firmly into the bottom of a 9-inch springform pan, and bake it for 10 minutes.
  • Remove it from the oven and let it cool completely.

Make the Lime Mousse

  • In a medium saucepan, whisk together lime juice, lime zest, sugar, egg yolks, and cornstarch.
  • Cook over medium heat, stirring constantly until the mixture thickens and bubbles.
  • Remove from heat and allow it to cool completely.

Whip the Cream

  • In a large bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  • Gently fold the cooled lime mixture into the whipped cream, being careful not to deflate it.

Prepare the Cheesecake Filling

  • In another large bowl, beat the cream cheese and sugar together until smooth.
  • Add in the vanilla extract and mix until fully combined.

Assemble the Cheesecake

  • Spread the cheesecake filling evenly over the cooled crust.
  • Pour the lime mousse over the cheesecake and spread evenly.
  • Refrigerate the cheesecake for at least 4 hours or until it sets.

Garnish and Serve

  • Top with fresh blackberries, mint leaves, and a sprinkle of additional lime zest before serving.

Notes

Make this dessert a day ahead of time for better flavors. Store leftovers in an airtight container in the refrigerator for up to a week.
