Ingredients
  

For the Chicken

  • 1 piece boneless, skinless chicken breast Low in fat and high in protein.
  • 1 tbsp olive oil For sautéing the chicken.
  • 1 tbsp low sodium soy sauce Adjust saltiness to taste.
  • 1 tbsp honey Gives sweetness to balance flavors.
  • 1 tsp minced garlic Adds garlic flavor.
  • 0.5 tsp rice vinegar or lemon juice For acidity.
  • to taste none salt and black pepper For seasoning.

For the Bowl

  • 1 cup cooked brown rice Hearty base, higher in fiber than white rice.
  • 2 cups broccoli florets Adds crunch and nutrition.
  • optional none red pepper flakes or sesame seeds For garnish and extra flavor.

Instructions
 

Preparation

  • Cook the brown rice according to package instructions.
  • Steam the broccoli until bright green and tender-crisp.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add sliced chicken breast, season with salt and pepper, and cook until golden brown (about 4-5 minutes each side).
  • Reduce heat and add honey, soy sauce, minced garlic, and vinegar. Stir and simmer until sauce thickens.

Assembly

  • Scoop rice into bowls, top with chicken and sauce, and arrange broccoli on the side.
  • Optionally sprinkle with red pepper flakes or sesame seeds.

Notes

Store leftovers in an airtight container for 3-4 days. The dish can be frozen for future meals, thaw and reheat before serving.
