Instructions
 

Preparation

  • Heat olive oil in a large, heavy-bottomed pot over medium heat.
  • Brown the beef chuck in the pot for 5-7 minutes, then set it aside.
  • Sauté chopped onion and minced garlic in the same pot until soft and fragrant, about 5 minutes.
  • Add sliced carrots, diced potatoes, and sliced mushrooms. Sauté for another 5 minutes.

Cooking

  • Return the browned beef to the pot and stir in the beef broth and Guinness stout.
  • Add tomato paste, dried thyme, bay leaf, salt, and pepper. Stir well.
  • Bring the mixture to a boil, then cover and reduce the heat to low.
  • Let the stew simmer for about 2 hours.
  • Before serving, remove the bay leaf and garnish with fresh parsley.

Notes

Meat quality matters; opt for good quality beef for better flavor. This stew tastes even better the next day. Feel free to experiment with different vegetables or herbs.
