For the cake

  • 1/2 cup cocoa powder Provides that rich chocolate flavor.
  • 1 tsp baking powder Helps the cake rise.
  • 1/4 tsp salt Enhances overall flavor.
  • 4 large eggs Crucial for structure and richness.
  • 1 cup granulated sugar Balances the cocoa and caramel.
  • 1/4 cup vegetable oil Keeps the cake moist.
  • 1 tsp vanilla extract Elevates the dessert flavor.

For the filling

  • 1/2 cup caramel sauce The heart of its gooeyness.
  • 1/2 cup pecan halves, chopped Adds wonderful crunch.

For the ganache

  • 1/2 cup heavy cream Used for silky chocolate ganache.
  • 1 cup semi-sweet chocolate chips Main ingredient for the ganache.
  • Extra pieces pecan halves for garnish To pretty things up.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Sift together the flour, cocoa powder, baking powder, and salt in a bowl.
  • Beat the eggs and sugar together until light and fluffy.
  • Add the vegetable oil and vanilla extract to the egg mixture, and mix well.
  • Gradually incorporate the dry ingredients until just combined.
  • Pour the batter onto the prepared baking sheet and spread evenly.
  • Bake for 12-15 minutes until the cake springs back when pressed.

Assembly

  • While the cake is still warm, carefully roll it up with the parchment paper and let it cool completely.
  • Once cooled, unroll the cake and spread caramel sauce over it, then top with chopped pecans.
  • Re-roll the cake without the parchment paper, seam-side down.

Finishing

  • Heat the heavy cream in a small saucepan until simmering, then pour over the chocolate chips and let sit for 2 minutes before stirring until smooth.
  • Drizzle the chocolate ganache over the cake roll and garnish with extra pecan halves.
  • Let the cake set completely before slicing.

Notes

Use fresh ingredients for the best results. Avoid overmixing the batter for a fluffier cake. Chill the cake if it's too warm to handle when rolling.
