  • 1 box White Cake Mix Forms the base of the cake for ease
  • 8 oz Can Crushed Pineapple (with juice) Adds moisture and tropical flavor

  • 1/2 tsp Vanilla Extract (for the pineapple mixture) Enhances the flavor of the syrup

For the Frosting

  • 8 oz Package Cream Cheese, softened For a rich and creamy frosting
  • 1/2 cup Butter, softened Adds richness to the frosting
  • 3 cups Powdered Sugar Sweetens and gives texture to the frosting
  • 1/2 tsp Vanilla Extract (for frosting) Every frosting needs a hint of vanilla
  • 3 cups Crushed Pecans Adds crunch and nutty flavor

Preparation

  • Preheat your oven according to the package instructions for the white cake mix.
  • Prepare the batter following the white cake mix package instructions and pour into a greased cake pan.
  • Bake according to the package directions until golden brown, then cool completely in the pan.
  • In a saucepan, combine the crushed pineapple (with juice), granulated sugar, and 1/2 teaspoon of vanilla extract. Bring to a boil over medium heat, stirring occasionally, for about 2-3 minutes until it thickens slightly.
  • Once the cake has cooled completely, poke holes all over the top with a wooden spoon.
  • Slowly pour the hot pineapple mixture over the cake, ensuring it seeps into the holes.
  • In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add powdered sugar and the remaining vanilla extract, and mix until just combined.
  • Stir in 2 cups of crushed pecans into the frosting, then spread the frosting over the cooled cake.
  • Sprinkle the remaining 1 cup of crushed pecans over the top for garnish.
  • Refrigerate for at least 6 hours or overnight for best flavor. Serve chilled and enjoy!

For best results, allow for proper cooling time and consider layering the cake with frosting for extra indulgence.
