  • 2 tbsp water To mix with cornstarch.

For the Fried Rice

  • 3 cups cooked rice, chilled Use day-old rice for best texture.
  • 2 eggs lightly beaten Adds heartiness and creaminess.
  • 1 tbsp vegetable oil for rice For tasty frying.
  • 2 tbsp onion, finely diced Extra onion for flavor.
  • 1 tbsp soy sauce for rice Flavor boost.

Preparation

  • Prepare the Sauce: In a bowl, combine the teriyaki sauce, soy sauce, brown sugar (or honey), sesame oil, cornstarch, water, and black pepper. Whisk until smooth.
  • Scramble the Eggs: Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the lightly beaten eggs, stirring until just set. Remove from skillet and set aside.

Cooking

  • Cook the Rice: In the same skillet, add diced onion and cook briefly until translucent. Toss in the chilled rice with soy sauce. Stir-fry for 4 to 5 minutes.
  • Cook the Chicken: In another skillet, heat the remaining vegetable oil over medium-high heat. Add chicken pieces and cook for about 6 to 8 minutes until browned and cooked through.
  • Add Aromatics: Stir in minced garlic and diced onion. Cook for about a minute until fragrant.
  • Combine: Pour the prepared sauce into the chicken skillet, stirring well. Bring to a simmer for 2 to 3 minutes until sauce thickens.
  • Serve: Serve teriyaki chicken over the fried rice, drizzling any extra sauce on top.

Notes

Use day-old rice for best texture, and feel free to use leftover vegetables. Don’t overcrowd the pan when cooking chicken and rice.
