Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Brown the beef cubes on all sides for about 6-8 minutes.
  • Add chopped onions and minced garlic, sauté until translucent (about 3-4 minutes).
  • Stir in tomato paste, thyme, salt, and pepper, cooking for another couple of minutes.
  • Pour in the beef broth, bring to a boil.

Cooking

  • Add potatoes, carrots, and bay leaves to the pot.
  • Cover and reduce heat to low, letting it simmer for 1.5 to 2 hours.
  • Taste and adjust seasoning before serving; remove bay leaves.

Notes

Allowing the stew to simmer slowly enhances flavor and tenderness. Store leftovers in an airtight container for 3-4 days in the fridge or up to 3 months in the freezer.
