  • 4 pieces Eggs Fried or poached for richness.

  • 0.5 cups Onion, diced Provides sweetness and crunch.
  • 0.5 cups Sour Cream For a creamy topping.
  • 0.5 cups Queso Fresco, crumbled Substitutable with your favorite cheese.
  • 1 medium Avocado, sliced For creaminess.

Preparation

  • Cut corn tortillas into triangles.
  • Heat about an inch of oil in a frying pan until it shimmers.

Frying Tortillas

  • Carefully add the tortilla triangles to the hot oil, frying in batches until golden brown and crispy, about 2-3 minutes.
  • Avoid overcrowding the pan to prevent soggy tortillas.

Prepare Salsa Verde

  • In a separate skillet, heat your salsa verde over medium heat until warmed through.

Combine and Serve

  • Gently toss crispy tortillas in the skillet with the warmed salsa, ensuring they are well-coated but still crunchy.
  • Plate the chilaquiles and top with a fried egg, diced onion, chopped cilantro, sour cream, queso fresco, and avocado slices.
