Ingredients
  

Puff Pastry

  • 1 sheet puff pastry The star of this recipe!

Filling

  • 8 oz cream cheese, softened Make sure it’s softened for easy mixing.
  • 1/4 cup sugar Just enough to sweeten the filling.
  • 1 tsp vanilla extract Elevates the flavor.
  • 2 cups apples, peeled and diced Use a mix of sweet and tart varieties.
  • 1 tsp cinnamon Provides warmth to the filling.
  • 1 tbsp lemon juice Prevents browning of apples.
  • 1 egg beaten For the egg wash.
  • as needed optional confectioners' sugar For dusting, if desired.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a floured surface, roll out your puff pastry to about 1/8 inch thick. Cut into squares or rectangles.
  • In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth.
  • In another bowl, combine the diced apples with cinnamon and lemon juice.

Assembly

  • Take a spoonful of the cream cheese mixture and place it in the center of each pastry square, followed by a spoonful of the apple mixture.
  • Fold the edges of the pastry over the filling to create a pocket and seal using a fork.
  • Brush the tops with the beaten egg.

Baking

  • Bake for 15-20 minutes until golden brown.
  • Let cool slightly before dusting with confectioners' sugar, if using.

Notes

Don’t overfill the pastries to avoid oozing. Chill puff pastry if it's warm in the kitchen. Experiment with spices for a unique flavor.
