Salad Ingredients

  • 1 ½ lb cucumbers, sliced Long English cucumbers are crunchier.
  • ½ medium red onion, finely sliced Adds sharpness and color contrast.
  • ¼ cup fresh dill, chopped The key herb for freshness.

Instructions
 

Preparation

  • Mix the Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper in a small bowl until smooth.
  • Slice cucumbers in half lengthwise, then cut each half into 3mm thick pieces. Slice the red onion as thinly as possible.

Assembly

  • In a large mixing bowl, combine cucumbers, red onion, and fresh dill.
  • Pour the dressing over the salad and toss gently to combine.

Serving

  • Serve immediately or chill in the refrigerator until ready to serve.

Notes

Letting the salad sit for 30 minutes allows the flavors to meld beautifully. Best served fresh and enjoyed within three days.
