Creamy Ingredients

  • 1 cup heavy cream or coconut milk Use coconut milk for a dairy-free version.

Seasoning

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing until soft and fragrant.
  • Stir in the mixed vegetables and cook for an additional 3-5 minutes.

Cooking

  • Pour in the vegetable broth and bring the mixture to a boil.
  • Reduce the heat and let it simmer until the vegetables are tender, about 10-15 minutes.

Finishing Touches

  • Add in the heavy cream or coconut milk and blend until smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if desired.

Notes
