  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 14.5-ounce can diced tomatoes (with juice)
  • 1 15-ounce can whole kernel corn, drained
  • 1 15-ounce can black beans, drained and rinsed
  • 1 10-ounce can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • to taste Salt and black pepper
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • to taste sliced green onions
  • to taste Extra shredded cheese
  • to taste Crushed tortilla chips

Instructions
 

Preparation

  • In a large pot, cook the ground beef over medium heat until it’s browned. Drain any excess grease.
  • Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  • Add the beef broth, diced tomatoes (including their juice), drained corn, black beans, diced potatoes, smoked paprika, chili powder, cumin, salt, and pepper. Stir well.
  • Simmer for about 20-30 minutes, or until the potatoes are tender, stirring occasionally.
  • Reduce heat to low and stir in the heavy cream or half-and-half and shredded cheddar cheese until melted.
  • Serve topped with sliced green onions, extra cheese, and crushed tortilla chips.

Notes

Let the soup sit for 30 minutes after cooking for best flavor. This soup freezes well; just leave space in the container as it expands.
