Preparation

  • In a mixing bowl, combine cottage cheese, cranberries, orange juice, and zest.
  • In another bowl, mix sugar, flour, baking powder, and salt.
  • Beat eggs and add them to the cottage cheese mixture along with melted butter and vanilla.
  • Gradually mix in the dry ingredients until just combined.
  • Pour the mixture into the prepared baking dish and bake for 25-30 minutes.
  • Cool for a few minutes, slice, and enjoy warm or chilled.

Notes

Don’t skip the orange zest; it adds an incredible layer of flavor. Let it cool for better cutting and texture, and consider adding nuts or spices for variation.
