  • 1 cup salsa Enhances flavor; choose your favorite type.
  • 1 tbsp taco seasoning Essential for authentic taco taste.
  • 1 cup shredded cheddar cheese, divided Cheese enhances the dish's flavor.
  • 1/2 cup sour cream Adds creaminess to the finished dish.
  • to taste none salt and black pepper Season to your preference.
  • 1/4 cup fresh cilantro, chopped Fresh garnish that adds a burst of flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • Cook the brown rice using chicken broth according to the package instructions, approximately 30-40 minutes.
  • In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, and taco seasoning. Mix well.

Assembly

  • Once the rice is cooked, spread it evenly on the bottom of the greased baking dish.
  • Pour the chicken mixture over the rice and spread it evenly.
  • Add your salsa over the chicken mixture.
  • Sprinkle half of the shredded cheddar cheese on top.
  • Cover the dish with foil and bake for about 25 minutes.
  • Remove the foil and continue baking for an additional 10 to 15 minutes until the cheese is bubbly and golden.
  • Let it rest for a few minutes, then drizzle sour cream on top and sprinkle with fresh cilantro.

Notes

You can substitute brown rice with quinoa or cauliflower rice for a healthier option. Adjust seasoning to taste, and feel free to add jalapeños for extra spice.
