Main Ingredients

  • 1 pound chicken breast, diced Feel free to swap for turkey.
  • 1 cup white rice Long-grain white rice preferred.
  • 1 can black beans, drained and rinsed Provides fiber and protein.
  • 1 cup corn Use frozen or canned.
  • 1 cup diced tomatoes Canned or fresh, based on preference.
  • 1 cup chicken broth Use good quality broth.
  • 1 cup shredded cheese Cheddar or Mexican blend recommended.
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil For sautéing.
  • 1 bell pepper, diced Red or yellow preferred for sweetness.
  • 1 onion, diced Provides depth of flavor.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat olive oil over medium heat in a large pot.
  • Add diced onion and bell pepper, sauté until softened.
  • Stir in the diced chicken and cook until browned.
  • Add rice, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  • Bring it to a boil, reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  • Remove from heat and stir in shredded cheese until melted.
  • Serve warm and enjoy!

Notes

Great for meal prep! Leftovers can be transformed into burritos or a salad. Adjust seasoning to your taste.
