Preparation

  • In a bowl, mix the cooked ground beef with mustard, ketchup, salt, and pepper.
  • Heat a non-stick skillet over medium heat and spray with cooking spray or add olive oil.

Assembly and Cooking

  • Place one tortilla in the skillet and layer with half of the cheese, the beef mixture, tomatoes, onions, and pickles.
  • Top with another tortilla and cook until the bottom is golden brown.
  • Carefully flip the quesadilla and cook the other side until it is golden and the cheese is melted.
  • Remove from the skillet, slice into wedges, and serve with extra ketchup or mustard if desired.
