  • 4 cups arugula Rinse thoroughly to avoid grit.
  • 1/2 cup crumbled feta cheese Can be substituted with goat cheese.
  • 1/2 cup shelled pistachios Add more for extra crunch if desired.
  • to taste salt and pepper Be careful with the salt due to feta.

For the Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Adjust to taste.

Preparation Steps

  • Peel and slice the blood oranges into rounds.
  • Cut the avocado in half, remove the pit, slice the flesh, and scoop it out.
  • In a large bowl, combine the arugula, blood orange slices, and avocado slices.
  • Top with crumbled feta and shelled pistachios.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
