Ingredients
  

For the Salad

  • 2 pieces Blood oranges Sweet and juicy, slice into segments.
  • 2 pieces Avocados Choose ripe avocados for creaminess.
  • 4 cups Fresh arugula Adds a peppery kick.
  • 1 cup Feta cheese Crumbled for saltiness.
  • 1/2 cup Pistachios For the crunch; can substitute with almonds or walnuts.

For the Citrus Dressing

  • 1/4 cup Olive oil Base of the dressing.
  • 2 tablespoons Lemon juice Freshly squeezed for better flavor.
  • 1/2 teaspoon Salt To taste.
  • 1/4 teaspoon Pepper To taste.

Preparation

  • Peel and segment the blood oranges over a bowl.
  • Slice the avocado in half, remove the pit, and slice into wedges.

Mixing Ingredients

  • In a large bowl, combine arugula, blood orange segments, avocado wedges, and crumble feta cheese over the top.

Finishing Touches

  • Sprinkle the pistachios on top and prepare the dressing.
  • Whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss gently.
  • Serve immediately.

Notes

Store leftovers in an airtight container, but consume within the day to prevent browning of avocados. Can prepare components ahead of time, but store dressing and avocados separately until serving.
