For the Cream Filling

  • 1 cup heavy cream Creates a light and fluffy texture.
  • 0.25 cups granulated sugar Sweetens the cream filling.
  • 1 teaspoon vanilla extract Enhances the flavor of the filling.
  • 8 ounces cream cheese, softened Provides creamy consistency.

For Assembly

  • 1 cup blackberry jam The star of the show!
  • 2 cups fresh blackberries Provides burst of freshness.
  • 0.25 cups chopped pistachios Adds crunch and decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a food processor, combine the flour, powdered sugar, and cubed cold butter. Pulse until mixture resembles coarse crumbs.
  • Add the egg yolk and vanilla extract, and pulse until the dough starts to come together.
  • Press the dough evenly into tart pans, pricking the bottoms with a fork. Bake for 15-20 minutes, or until golden brown.
  • Let the crusts cool completely before adding filling.

Making the Filling

  • In a large bowl, whip heavy cream, granulated sugar, and vanilla extract until stiff peaks form.
  • In another bowl, beat softened cream cheese until smooth. Fold in whipped cream mixture gently.

Assembly

  • Spread a layer of blackberry jam on the cooled tart crusts. Dollop the cream mixture on top.
  • Top tarts with fresh blackberries and sprinkle chopped pistachios over them.
  • Chill for about 30 minutes in the refrigerator to set before serving.
