  • 1 lb ground beef Main protein; substitute with turkey for a lighter version.
  • 1 small onion, finely diced Adds flavor.
  • 2 cloves garlic, minced Increases flavor.
  • 1 packet taco seasoning (1 oz) Can be store-bought or homemade.
  • ½ cup salsa Use your favorite brand.
  • 1 cup refried beans Adds a creamy layer.
  • cups shredded cheddar cheese Or Mexican blend.
  • 6 large flour tortillas Make sure they’re soft.
  • 2 tbsp vegetable oil For brushing or frying.

Preparation

  • Heat a large skillet over medium heat. Add ground beef and finely diced onion, cooking until the beef is browned and the onions are tender.
  • Drain excess grease. Stir in minced garlic, taco seasoning, and salsa, simmering for about 3-4 minutes.

Assembly and Cooking

  • Spread a spoonful of refried beans down the center of each tortilla.
  • Top with a scoop of the beef mixture and shredded cheese. Fold in the sides and roll up tightly.
  • For baking, preheat oven to 400°F (200°C), brush chimichangas with oil and bake for 18-20 minutes, flipping halfway.
  • For frying, heat oil in a skillet and cook chimichangas seam-side down for 2-3 minutes per side until crispy.
  • Let chimichangas rest for a couple of minutes before serving with toppings like sour cream, guacamole, or salsa.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. Reheat in the oven at 375°F (190°C) for 10-15 minutes. Can be assembled ahead of time and frozen.
