For the rhubarb filling

  • 2 cups rhubarb, chopped The star ingredient that provides tartness.
  • 2 tablespoons cornstarch Thickens the rhubarb filling.
  • 1 tablespoon lemon juice Enhances the flavor of the rhubarb.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x9 inch baking pan with butter or nonstick spray.
  • In a large bowl, mix the flour, oats, brown sugar, granulated sugar, cinnamon, and salt together.
  • Pour the melted butter into the dry mixture, stirring until it resembles coarse crumbs.
  • Press the mixture firmly into the bottom of the greased pan, reserving 1 cup for topping.

Filling and Baking

  • In another bowl, combine the chopped rhubarb, cornstarch, and lemon juice.
  • Spread the rhubarb mixture evenly over the crust.
  • Sprinkle the reserved crumb topping generously over the rhubarb.
  • Bake in the preheated oven for 30-35 minutes until the top is golden brown.
  • Remove from the oven and let it cool before cutting into bars.

Notes

For best results, chill the dough if it's too soft and make sure to grease the baking pan well to avoid sticking. Adjust sugar based on the tartness of the rhubarb.
